Protein concentrate launch from Epi

Continued consumer interest in protein has led Epi Ingredients to launch its first protein concentrate.

Epiprot 60 UL is, says the company,a solution for product developers seeking a ‘highly functional quality protein source with excellent nutritional properties’. The ingredient offers gelling, emulsifying and water retention capabilities, and also promises enhanced creaminess in low-fat, high-protein applications, according to Epi.

Epiprot 60 UL is a milk protein concentrate containing 60 per cent total native protein. It is produced directly from fresh milk using an ultra-low heat process which allows for minimal denaturation and optimal functional and nutritional properties. It also preserves the 80/20 casein/native whey protein ratio unadulterated.

This new ingredient can be incorporated into a range of applications such as cheese, yogurt, quark and beverages.
