Galbani Professionale capitalises on dessert-coffee trend

With the UK food and beverage market seeing an unprecedented surge in demand for hyper-indulgent cold beverages, Galbani Professionale has officially declared Thursday 9 July 2026 as the inaugural National Tiramisu Latte Day.
The national campaign aims to champion the trending beverage format while highlighting it as a highly profitable, operationally viable menu addition for coffee-led businesses.
As illustrated by the booming beverage trend, modern specialty coffee serves are moving away from traditional morning fuel toward visual, multi-layered experiences.
The Tiramisu Latte achieves this distinct aesthetic through a structured presentation of rich espresso, liquid milk, and a dense, velvety cream top traditionally finished with a heavy dusting of cocoa powder.
Driven by Gen Z’s dessert-drink demand
The launch responds directly to shifting consumer demographics and changing purchasing motivations behind the bar. Recent market data highlights two massive consumer behaviours currently reshaping British café culture:
- 74% of Gen Z consumers now actively prefer iced coffee options over traditional hot serves.
- 68% of consumers now view specialty iced coffee options primarily as “desserts or treats” rather than a simple caffeine source.
By bridging the gap between a morning pick-me-up and a premium afternoon dessert, the Tiramisu Latte creates an ideal dynamic for operators to increase average spend-per-head during typically slower post-lunch trading hours.
High-street partnerships
To celebrate the event, Galbani Professionale is launching a flagship partnership with Nonna Bakery in High Holborn, London. On 9 July, the bakery will serve two exclusive, premium iterations of the beverage engineered specifically for fast-paced café workflows: the Classic Iced Tiramisu Latte and the Pistachio Iced Tiramisu Latte.
Both recipes feature Galbani Mascarpone as the structural hero ingredient, ensuring the signature velvety texture of a true Italian tiramisu while remaining stable and easy to dispense during peak bar service.
Matteo Cicero, founder of Nonna Bakery, commented on the operational benefits of the collaboration: “Dessert-inspired iced drinks are exactly what our customers want right now. Using Galbani Mascarpone has helped us create two iced serves that feel indulgent while still working operationally behind the bar. Our collaboration has proven that premium drinks command a higher price point and deliver exceptionally strong margins for operators.”
Beyond Nonna Bakery, Galbani has partnered with three other prominent London coffee operators who will each debut their own signature take on the drink for the nationwide celebration: Être, Artful Blend, and Oati.
The Tiramisu Latte Toolkit
To support independent operators across the country, Galbani Professionale has developed a dedicated Tiramisu Latte Toolkit. The business resource is designed to let everyday café bars easily test, list, and promote a tiramisu-style beverage with zero disruption to speed of service, ensuring consistent execution without requiring specialised barista training.
Héloïse Le Norcy-Trott, group marketing & category director at Lactalis UK & Ireland, explained the strategic vision behind the rollout:
“Coffee menus are more competitive than ever, and operators are under increasing pressure to refresh drink specials while maintaining speed and consistency. National Tiramisu Latte Day is about showcasing a drink format that feels current, clearly indulgent and – crucially – works operationally in a busy café environment.”
