Fruit Logistica: Provisur to showcase precision refining systems for premium fruit production

Provisur is set to unveil its latest modular production systems at Fruit Logistica (4-6 February 2026), targeting manufacturers looking to elevate the quality of fruit compotes, mashes, and juices.
The showcase highlights a shift toward high-yield, low-impact refining technologies that prioritise the preservation of fruit integrity.
By utilising advanced separation and pressure-control technologies, Provisur’s equipment allows manufacturers to achieve “premium” status through superior texture, colour retention, and the complete removal of undesirable hard components.
The STS Series: high-throughput hygiene
For producers of jams, purees, and fruit sauces, the STS (Soft Tissue Separator) range — including the new STS 2000 — offers a significant leap in quality control. The system uses a flexible pressing belt to pull fruit against a perforated drum. While the soft, premium fruit pulp passes through the holes, hard components like skins, stones, and stems are efficiently scraped away.
This gentle mechanical separation prevents the “bruising” of the fruit tissue, ensuring the end product maintains its natural organoleptic properties. Its robust design also simplifies cleaning, a critical factor for manufacturers managing high-risk hygienic environments.
The Barracuda: artisanal quality at scale
The AM2C Barracuda is designed for flexibility, catering to both artisanal batches and large-scale industrial runs (with capacities ranging from 100 kg to 30 tonnes per hour). What sets the Barracuda apart for premium production is its low RPM and single-screw feed system.
By handling raw materials at a lower speed, the machine minimises heat friction, which is essential for protecting the delicate flavours and vibrant colours of fresh and cooked fruits. It is particularly effective for high-fibre products, refining particles as small as 360 microns for an ultra-smooth finish.
Hoegger Technology: the “Delta Pressure” advantage
For the most delicate fruit products, Provisur’s Hoegger PS2000 and PS4000 refiners utilise a delta pressure sensor system. Unlike traditional refiners that can crush delicate fibres, the Hoegger maintains a constant, very low pressure.
Combined with recipe-controlled knife head speeds, this technology allows for:
- Precision removal: targeted extraction of pits, black spots, and stems without damaging the surrounding pulp.
- Consistency: automatic regulation ensures that every batch meets the same “premium” texture profile.
- Efficiency: lower operating costs and high yields provide a faster return on investment for medium-to-large-scale processors.
Provisur will be offering live demonstrations of these technologies at their booth, highlighting how integrated systems can be customised to specific fruit varieties.
