Zùsto introduces ‘world first in sugar substitutes’
Zùsto, the world’s first “sugar without sugar” has launched in the UK, meaning bakers can now apply a sugar substitute to existing recipes.
Zùsto – an FDA approved 1:1 high quality sugar substitute – is composed of a blend of naturally derived fibres that deliver the sweet taste and make-up of traditional sugar. Most of the fibres are derived from corn and chicory.
Zùsto offers a number of health benefits, it contains 75% less calories than sugar, has a low glycemic index (22) which means it is suitable for diabetics, offers a healthy alternative for weight control and it has a significant prebiotic influence on the immune system of the human intestinal flora.
Zùsto said what makes the sugar substitute stand out is how it can be used as a part or full replacement of sugar on a 1:1 weight basis while staying as close as possible, in construction, to the original food product.
It can be used across the majority of culinary applications where sugar is currently used including baking, ice creams, cereals, confectionery, chocolate, preserves, cookies, biscuits and desserts as well as hot drinks.
Executive pastry chef and a member of the Royal Academy of Culinary Arts and Association of Pastry Chefs, Ross Sneddon, who has been trialing Zùsto in a number of recipes said: “Zusto has been a real problem solver for us, I can now have one offering across several individual dietary requirements, its perfect for diabetics and is allergy free.
