Innova Market Insights unveils top global flavour trends for 2026

Innova Market Insights has officially released its Global Flavor Trends for 2026, identifying five key pillars set to define product innovation and consumer preferences in the coming year.
The report highlights a significant shift toward multisensory experiences, emotional well-being, and “cultural remixes” as consumers seek a balance between adventurous taste profiles and functional health benefits.
“Sensorial Explorations” leads the trends, as textures and visual appeal become essential drivers of perceived value. According to Innova, 26% of Gen Z consumers now actively seek visually striking and surprising flavour combinations. This trend is expected to manifest through innovative toppings, seasonings, and bold experimentation in sauces.
Globalisation also continues to influence the palate through “Cultural Remix.” Three in five global consumers expressed an openness to traditional flavours with a modern twist, fuelling a rise in hybrid blends that marry local heritage with global inspirations.
Health remains a primary focus, but with a caveat: flavour cannot be sacrificed. The “Easy Health, Full of Flavor” trend notes that while over 60% of Gen Z and Millennials are prioritising protein intake, taste remains the ultimate deciding factor for repeat purchases. Innova suggests that brands succeeding in 2026 will be those that effectively mask functional ingredients or reduce “undesirables” without compromising the sensory profile.
Emotional connection is another critical driver. The “My Mood, My Flavor” trend reveals that 74% of global consumers look to food and beverage to improve their mood or cope with stress. This has led to a rise in flavours tailored to specific times of day or mental states, positioning flavour as a tool for self-care.
Finally, “Flavor Fest” highlights the growing importance of occasion-based innovation. From celebratory seasonal launches to mealtime experimentation, consumers are increasingly viewing eating as a form of personal expression and tradition.
