Galactic launches low-dust granulated vinegar solution

Galactic has announced the launch of its new Galimax Flavor V-100 Pearls, a free-flowing, low-dust granulated vinegar preservation solution that combines powerful antimicrobial action with improved handling and formulation performance. This breakthrough product was available for exploration at IFT FIRST, Chicago, IL, USA, July 12–15, 2026.
Performance meets practicality
Galimax Flavor V-100 Pearls were developed with the aim to deliver the same proven antimicrobial efficacy and mild sensory profile as the standard powdered vinegars available on the market in a free-flowing, low-dust ‘pearl’ format.
Developed in response to food manufacturers’ demand for safe, efficient and effective preservative ingredients, this first-of-its-kind granulated vinegar offers a fermentation-derived solution that keeps food fresh, safe and delicious for longer, while resolving some of the most persistent production-line challenges.
In contrast to conventional fine vinegar powders, Galimax Flavor V-100 Pearls are engineered for superior handling and processing. The uniform, coarse granules are virtually dust-free, reducing product loss, cleaning burden, and operator exposure. With approximately 30% higher bulk density and best-in-class flowability – delivering a full classification improvement in both Carr Index and Hausner Ratio compared with standard powders – the pearls support more accurate dosing and efficient handling.
Their resistance to caking also helps maintain ease of use over time, while reconstituting more than twice as fast as conventional powdered format. The pearls disperse cleanly in water, brines, and marinades, eliminating clumping and ‘fisheyes’ and allowing seamless integration into a wide range of recipes and food matrices.
Critically, Galimax Flavor V-100 Pearls use the same active ingredient, and concentration as traditional powdered vinegar solutions, with identical maximum solubility. In the US, they can simply appear as ‘vinegar’ on product ingredients lists. The result is seamless substitution without the need for reformulation or revalidation.

As labour shortages, hygiene requirements and production efficiency continue to shape investment decisions, ingredient suppliers are responding by engineering products that solve practical manufacturing challenges alongside formulation needs.
That trend is illustrated by Galactic’s latest innovation, Galimax Flavor V-100 Pearls, which the company describes as a first-of-its-kind free-flowing, low-dust granulated vinegar preservation solution.
Unveiled at IFT FIRST 2026 in Chicago, the ingredient combines the antimicrobial properties of powdered vinegar with a granulated ‘pearl’ format intended to improve handling during production.
While vinegar-based preservation has long been established as a clean-label antimicrobial solution, Galactic’s development focuses on the operational realities of using powdered ingredients at industrial scale. Fine powders can generate dust, create housekeeping challenges, contribute to ingredient losses and make accurate dosing more difficult—issues that become increasingly significant in high-volume manufacturing environments.
According to Galactic, the pearl format addresses these concerns through coarse, virtually dust-free granules that improve flowability and increase bulk density by around 30% compared with conventional powdered vinegars. The company says this enables more consistent dosing while reducing product loss and operator exposure during handling.
The product has also been designed to resist caking during storage and to disperse rapidly in water, brines and marinades, reducing clumping and simplifying incorporation into recipes without requiring process changes.
Perhaps most significant from a manufacturing perspective is Galactic’s claim that the ingredient can directly replace traditional powdered vinegar solutions. Because it uses the same active ingredient at the same concentration and achieves identical maximum solubility, manufacturers can substitute the new format without reformulating existing products or repeating validation work. In the United States, it can also continue to be declared simply as “vinegar” on ingredient labels, supporting clean-label positioning.
The launch reflects a broader shift taking place across food ingredient development. Suppliers are increasingly recognising that processing performance has become just as important as technical functionality. Whether improving flow characteristics, reducing dust, enhancing automation or simplifying dosing, ingredients are being designed to integrate more effectively into modern production environments rather than simply deliver a food science benefit.
Food safety remains central to the proposition. Galactic cites validation studies indicating that a 0.75% inclusion rate of Galimax Flavor V-100 Pearls inhibits the growth of Listeria in ready-to-eat chicken deli meat, combining preservation efficacy with operational improvements.
