Organisers of Evolio Expo have announced the core themes for the upcoming third edition of the B2B extra virgin olive oil (EVO) trade show, taking place from 28 to 30 January 2027 at the Fiera del Levante in Bari, Italy.

Held under the overarching focus of “Oil is Innovation,” the event will highlight how technology, digital traceability, and clear communication are driving a more competitive, transparent, and sustainable olive oil supply chain.

Tracing the journey from olive to bottle

A central focus of the 2027 show will be empowering producers to enhance product transparency through modern tracking tools and clear labelling. Technologies such as blockchain enable exact mapping of an olive’s journey from harvest and processing through to final point-of-sale, providing verified historical and technical data directly to consumers.

“The key is certainly information: the ability to enable consumers to be increasingly well-informed, in detail, about a product’s history,” explains Luigi Fino of Confconsumatori Puglia. By connecting technical traceability with transparent packaging and strategic messaging, Evolio Expo 2027 aims to show how producers can protect product authenticity and build consumer trust in international markets.

Driving competitiveness through standardised quality

In addition to traceability, the exhibition will examine how adopting standardised processes, cutting-edge milling technologies, and rigorous quality controls elevates competitiveness on the global stage.

Vincenzo Laudadio, vice president of ADUSBEF Puglia, stresses that applying repeatable quality standards and control models reduces operational errors and elevates regional production.

“If you apply this production model, you can go anywhere in the world… This is how our olive oil, not just from Puglia but from all of Italy, can establish itself as one of the true hallmarks of ‘Made in Italy’ excellence around the world,” notes Laudadio.

The event will also address the evolution of olive mills — where heritage intersects with modern extraction tech — while advocating for stronger regulatory frameworks to safeguard producers who adhere to strict quality standards.

A comprehensive B2B hub for Mediterranean olive oil

Organised by Senaf on behalf of Nuova Fiera del Levante, Evolio Expo 2027 integrates its “Oil is Innovation” theme alongside two other key pillars: “Oil is Health” (exploring wellness and nutritional research) and “Oil is Tourism” (promoting oleotourism and regional heritage).

Visitors to the three-day event can expect:

  • B2B matchmaking & conferences: targeted meetings, expert panels, and technical talks uniting producers, institutional representatives, and international buyers.
  • Guided tastings & demonstrations: educational masterclasses, professional tasting courses, and live cooking demonstrations featuring expert chefs, doctors, and researchers.
  • Expanding global reach: building on the previous edition — which brought together 6,720 visitors, 150 exhibiting companies, and 50 international buyers from 16 countries — the 2027 event aims to solidify Bari’s role as a primary commercial platform for Mediterranean extra virgin olive oil.
