Unilever Food Solutions leverages authentic flavours to attract Gen Z

Foodservice operators face a dual pressure of attracting Gen Z — the first generation to systematically research menu items online before dining — while battling chronic kitchen labour shortages.
Research highlights that 64% of Gen Z diners actively avoid brands they perceive as in authentic, putting pressure on operators to deliver genuine regional flavours.
However, operational reality often intervenes. Nearly 28% of chefs report that a lack of skilled kitchen staff prevents them from introducing new global cuisines, despite more than half expressing a desire to do so.
To bridge this gap between consumer demand and back-of-house capability, Unilever Food Solutions (UFS) launched its Knorr Professional Ready-to-Use Mexican sauces range (featuring Chipotle Honey Lime, Mango Habanero, and Smoky Ancho Birria). Just two months after its US debut, the line achieved the highest customer engagement of any UFS innovation in the market to date.
Insight-driven innovation
The success of the launch stems from UFS’s culinary insight strategy — what the company calls its chef-to-chef ‘chefmanship’ approach. Grounded in Knorr’s long-standing heritage in Mexican cooking, UFS engineered sauces that deliver true-to-origin taste profiles while requiring zero scratch prep.
By providing consistent, ready-to-use formats, operators can eliminate skill barriers and operational risk without compromising quality. Furthermore, the format offers multi-application versatility: a single sauce can stretch across menu formats — from traditional tacos and bowls to burgers, ribs, and beverages — allowing operators to maximise SKU efficiency across dayparts.
Commenting on the shift in operator behaviour, Ximena Hernandez, head of marketing at UFS North America, stated: “Global flavour demand is rising, with 70% of operators reporting increased customer interest and nearly half planning to extend global ingredients across more menu applications.
Sauces and condiments are not only the easiest but also the most scalable menu solutions for foodservice, especially in kitchens facing labour constraints.”
Unilever Food Solutions’ rapid traction with its Knorr Mexican sauce range shows that in a market constrained by kitchen labour and rising operational costs, ingredient suppliers must sell operational speed and risk mitigation. By identifying birria (up 360% on US menus) and translating complex, slow-cooked regional dishes into turn-key sauce formats, UFS proves that authenticity and convenience are no longer mutually exclusive.
For food manufacturers, ingredient suppliers, and foodservice operators, sauces and finishing condiments are currently the most efficient vector for menu innovation. As consumer demographics shift toward Gen Z, suppliers that deliver true-to-origin regional flavours will continue to outperform traditional transactional ingredient vendors.
