Fresh food frozen out

Taste tests commissioned by the British Frozen Food Federation (BFFF) have revealed that pub-goers could find ‘no obvious difference’ between fresh and frozen dishes.

The research saw diners trying fresh and frozen versions of the same popular pub menu meals, including hunter’s chicken with mash, burger and chips, gammon and jacket potato, and fish and chips.

“We are pleased that the results reflected our beliefs that frozen food can be just as good as fresh,” says director general Brian Young. “The meals we used were typical of a regular pub menu as we wanted to demonstrate to both diners and pub owners that it is possible to take advantage of the lower cost and reduced waste that frozen food offers without compromising on the quality of meals served.”

For the pub taste test, diners were served two versions of the same meal at the same time. Meal A was the frozen version and meal B was the fresh version. Each meal was cooked and presented identically. Diners were not told what the difference between each meal was until the taste test had finished.
