Molecular biology meets confectionery for functional chocolate

The confectionery sector is witnessing a high-stakes convergence of molecular biology and traditional indulgence with the UK debut of RELEEESE, a functional food brand that aims to redefine the metabolic impact of chocolate.

Backed by the research of German molecular biologist and cancer researcher Dr Johannes Coy, the brand’s flagship product, RELEEESE Chocolate, moves beyond the sugar-free trend toward a model of “intelligent sugar” management.

This technical profile indicates that RELEEESE is positioning chocolate as a vehicle for metabolic and digestive wellness.

The brand’s commercial strategy targets a highly specific segment of the “Health-Optimiser” market. Priced at a premium £29.99 for a box of 10, the product is currently sold exclusively through a direct-to-consumer (DTC) model. This allows the brand to maintain its positioning as a science-backed specialist item while building a community around Dr Coy’s metabolic research.

However, the brand’s ambitions extend beyond the impulse bar. RELEEESE plans to colonise the wider pantry later this year with the launch of & Bake and Everyday sugar mixtures. This suggests a long-term goal of replacing traditional baking sugars with low-GI alternatives across multiple food categories.
