Sustainable condiment pioneer Rubies in the Rubble is heating up the UK food scene this summer with an eco-conscious twist.

Operating under the bold ethos of “Condiments. But Gooder.”, the certified B Corp is expanding its award-winning line-up by introducing three fiery new innovations designed to tackle global food waste one delicious squeeze at a time.

Launching on Ocado on 17th June 2026, the new collection marks a major milestone for the brand. The range includes a sweet and spicy Hot Honey Sauce (RRP £4.20 per 250ml), alongside a vibrant Habanero Hot Sauce and a tangy Jalapeno Hot Sauce (both RRP £3.00 per 250ml). True to the brand’s core mission, these sauces are packed with premium, delicious ingredients that would otherwise have been discarded due to strict supermarket aesthetic criteria or supply chain over-forecasting.

A fiery kick for sustainable eating

The new range masterfully blends intense heat with surplus produce to elevate everyday meals:

  • Hot Honey Sauce: a “swicy” sensation combining 100% pure honey with the bold heat of fermented red-hot pepper — perfect for drizzling over pizza, wraps, and summer salads.
  • Habanero & Jalapeno Hot Sauces: infused with the goodness of saved pears, carrots, and fermented peppers, offering a sweet twist and varying levels of heat. They are ideal for slathering onto a Sunday roast or kicking breakfast up a notch on eggs.

Finding abundance in waste

With a staggering one-third of all global food currently wasted — contributing to 7% of global greenhouse gas emissions — Rubies in the Rubble has been redefining the food system since 2012. By partnering directly with farmers to give a second life to their surplus, the brand has already saved an incredible 10.7 million fruits and vegetables, effectively avoiding over 1 million kgs of CO2 emissions.

Founder Jenny Costa, who started the business after witnessing the vast quantities of perfectly edible produce discarded at London wholesale markets, expressed her excitement for the launch: “Rubies has you covered for classic table sauces, now we’re taking things up a gear with tangy, fiery hot sauces and sweet, spicy hot honey; each bottle rescues produce that was destined to be wasted and adds a flavour punch to elevate your everyday dishes.”

Meeting consumer demand for change

This launch arrives as conscious consumption shifts from a niche trend to a mainstream consumer expectation. Recent data shows that 85–90% of Gen Z and Millennials expect brands to actively take a stand on social and environmental issues. By offering full transparency, authenticity, and a tangible solution to food surplus, Rubies in the Rubble continues to prove that sustainable choices do not require compromising on flavour.

From local markets in 2012 to major stadium presences and listings in Tesco, Co-Op, and Ocado, Rubies is proving that there is always beauty and taste to be found in what society overlooks.
