Italian mills praised as World Pizza Day celebrates the iconic food

Italy marked World Pizza Day on 17 January with a renewed spotlight on the ingredient that underpins one of the country’s most recognisable culinary exports: flour.
According to Italmopa – the Italian Industrial Millers’ Association – more than 450 million kilos of flour produced by Italian mills are used each year to make over 3 billion pizzas, reinforcing the sector’s pivotal role in the global success of “Made in Italy” food culture.
Celebrated annually on the feast of Saint Anthony the Abbot, patron saint of bakers and pizza makers, World Pizza Day is both a symbolic moment and a reminder of the deep cultural roots of a product that has become a worldwide phenomenon. Behind every Neapolitan-style crust, Roman slice or contemporary gourmet creation lies a milling tradition that has shaped Italian gastronomy for centuries.
Italmopa emphasises that the strength of Italian pizza begins long before the dough is stretched. The country’s mills select and process the finest wheat varieties with meticulous precision, producing flours that deliver consistency, elasticity and flavour — qualities essential for professional pizzaioli and home bakers alike.

He added that the versatility of Italian flours allows mills to meet the evolving expectations of pizza makers and consumers both domestically and internationally.
As consumer spending increasingly shifts toward premium and artisanal products, Italy’s favourite pizzas continue to reflect this trend. The Margherita remains the undisputed leader — prized for its simplicity, balance and iconic colours — while the Diavola and Capricciosa maintain strong followings among those seeking bolder flavours.
The association notes that the enduring popularity of these classics is closely tied to the quality of the flour used to make them. Whether for traditional wood‑fired pies or modern reinterpretations, Italian mills provide the foundation that ensures texture, aroma and authenticity.
