Westfalia Fruit’s ‘whole tree’ strategy redefines avocado sustainability

Westfalia Fruit continues to unlock value in the supply chain through its ‘Whole Tree’ approach.
Westfalia Fruit, the global leader in avocado production, has unveiled the latest progress in its “whole tree” approach, a comprehensive strategy designed to eliminate waste by utilising every part of the avocado tree and every grade of fruit.
In an era defined by climate volatility and rising supply chain costs, Westfalia is shifting the industry narrative from simple crop management to a sophisticated circular economy model. By viewing the avocado tree as a source of multiple raw materials rather than just a fruit producer, the company is unlocking new revenue streams while hitting aggressive zero-waste targets.
Total crop utilisation
Westfalia’s strategy begins with an integrated supply chain that ensures no fruit is left behind. While “good, better, and best” tiers are sold as fresh whole fruit, specimens that do not meet aesthetic market specifications are diverted into a vast processed portfolio.
This includes high-value convenience products such as:
- Guacamole and smashed avocado: premium pulp for retail and foodservice.
- Oils and frozen formats: utilising high-fat content for culinary and industrial use.
- IQF (individually quick frozen) Portions: Ensuring consistent supply regardless of seasonal fresh fruit availability.
Upcycling the unusable
The most innovative frontier of the “whole tree” approach lies in the by-products that the industry typically discards or sends to anaerobic digesters. Drawing on over seven years of research and development, Westfalia is now moving toward a fully integrated process to convert avocado skins and stones into commercially viable materials.
These workstreams are targeting several high-growth sectors including natural pigments, developing sustainable colourants and dyes from skins and stones; and sustainable packaging, extracting fibre and starch to create biodegradable alternatives to plastic.
Strengthening circular agriculture
By extracting valuable compounds from materials traditionally classified as low-value compost, Westfalia is significantly improving operational efficiency. This holistic management of the value chain provides a “buffer” for growers against market fluctuations, ensuring that even in difficult growing seasons, the entire crop holds value.
