IFF’s stabiliser system to transform plant‑based gummies

IFF has launched Danisco Grindsted DuoGel, a new stabiliser system designed to finally close the long‑standing texture gap between plant‑based and traditional gummies — a challenge that has limited innovation in one of confectionery’s fastest‑growing segments.
Now available across Europe, the Middle East and Africa, the system gives manufacturers a way to deliver the juicy, elastic chew consumers expect from fruit‑based gummies, without relying on gelatin.
Biggest technical barrier
Plant‑based gummies have surged in popularity, but texture has remained a persistent stumbling block.
Many gelatin‑free formulations produce a short, brittle bite or a dense, sticky chew, especially in low‑pH, fruit‑based recipes.
IFF’s new system directly targets this issue.
“The confectionery market across EMEA is growing quickly and has already shifted toward plant‑based, but texture has remained a barrier,” said Elisa Vimercati, vice president of systems and locust bean gum for IFF Food Ingredients. “With Grindsted DuoGel, we’re introducing a first‑of‑its‑kind solution in the region that enables manufacturers to deliver the indulgent eating experience consumers expect.”
Grinsted DuoGel combines pectin and carrageenan in a synergistic system that creates the juicy, chewy elasticity typically associated with gelatin — a texture that has been difficult to achieve with single‑ingredient stabilisers.
Designed for performance
Beyond texture, the system is engineered for ease of implementation, allowing manufacturers to integrate it into existing gummy lines without major process changes.
“Grindsted DuoGel represents a step change for plant-based confectionery,” said Linda Friis, vice president of applications, EMEA for IFF Food Ingredients. “It delivers consistent texture and allows easier implementation on existing production lines, giving manufacturers the confidence to innovate and scale quickly.”
IFF’s internal studies show additional performance benefits, including improved melt resistance, reduced surface stickiness, and more reliable distribution in hot climates.
These attributes are especially valuable for brands exporting to warmer regions or operating in markets with challenging logistics conditions.

The system is halal‑certified and suitable for plant‑based and vegan claims, giving manufacturers flexibility in product positioning as consumers increasingly seek confectionery aligned with dietary and ethical preferences.
