Cradle to cultured: IFF spells out dairy’s life stages

IFF has published Dear Dairy: The Life Stages Guide, a resource arguing that dairy innovation should follow consumers through life rather than chase a single trend.
Drawing on its proprietary Panoptic foresight tool, it identifies four stages:
- Taste of Nourishment: children want taste, texture and enjoyment, while caregivers want balanced nutrition. Reduced sugar without losing creaminess is the challenge.
- Taste of Growth: in adolescence and young adulthood, dairy shifts from being given to being chosen, and products become a statement of identity and values.
- Taste of Balance: busy adults want healthy choices that fit their routines, combining functional benefits, convenience and sensory appeal.
- Taste of Comfort: older consumers look to dairy for vitality, mobility and quality of life, in products that feel empowering rather than clinical.
Concept innovations
The guide pairs each stage with a concept built on IFF technologies:
- Yogipop (Nourishment): a spoonable yogurt that uses IFF’s FLAVORFIT solutions to keep strawberry flavour and creamy texture in a reduced-sugar recipe.

For manufacturers, the takeaway is that one platform may need different formulation priorities for different cohorts. Sugar reduction and mouthfeel matter most for younger consumers, bitterness masking and convenience for adults, and protein delivery without a medicinal feel for older ones.
