Dawn Foods UK and Ireland has expanded its fonds (cream stabilisers) range with a new matcha flavoured fond, alongside improved strawberry and raspberry variants.

Traditionally used to make mousses and bavarois, fonds have been re-imagined supporting a much broader range of applications. For example, they can be used in pannacotta, cheesecakes, glazes, icings, meringues, layered desserts and filled bakery formats, helping baker move beyond classic uses and explore more contemporary, high-value concepts.

Dawn’s new Matcha Fond will deliver the vibrant colour and distinctive earthy-sweet taste that has helped matcha to become firmly established in the European mainstream; matcha-flavoured food and beverage launches grew at 23% between 2021 and 2025 (source: Innova Market Insights, Europe Food & Beverage Launch Data, 2021-2025). This sustained growth is increasingly extending beyond beverages into bakery and indulgent applications.

This growth is reinforced by strong market adoption, with leading brands incorporating matcha in various products from beverages and chocolate to donuts, cakes, and cookies.

Dawn will also be relaunching its strawberry and raspberry fonds, with improved formulations, delivering enhanced flavour intensity, more vibrant colour, and a higher amount of fruit pieces.
