Flavour analysis breakthrough
Symrise has developed a new tool for flavour analysis which it says will enable it to produce more authentic profiles quickly and efficiently, as well as more true to life natural flavours.
Until now, Symrise has used much more time-consuming methods for analyzing the complex flavour profile of a finished dish, but it says its new SymStixx system is easy to use, allows more detailed flavour profiling of complex foods, and is more cost-efficient than other methods.
The new probe is made of glass with a specialised coating that absorbs different molecules when placed into a food product.
These are then separated and identified by a GC/MS (gas chromatography-mass spectrometry) system and the components are compared to compounds in Symrise’s extensive database for identification.
“The instrument is as easy to use as a knife and fork, says a Symrise spokesman.“And because it is highly sensitive to trace compounds, SymStixx produces precise results.
