Stabilisers to reduce formulation costs in cheese slices

Spanish organiation Premium IngredientsCheese slices, a company specialising in the design, production and marketing of blended functional food ingredients, has launched a new range of stabilisers. Based on modified starch and hydrocolloids, they are specially designed to reduce formulation costs in the IWS cheese slices manufacture process.

Its new products, Premitex XLK-13023, Premitex XLK-13024 and Premitex XLK-13025, enable the formulation cost to be lowered by gradually reducing the protein content and dry matter along with keeping optimal functionality; both during the manufacturing process, and in the cheese application to sandwiches.

Furthermore, this range of products presents an excellent separability of the plastic foil; allowing an optimal manipulation of cheese slices. They also melt and add creaminess to any kind of sandwiches.

Particularly, Premitex XLK-13023 has been designed for the production of very low cost IWS slices with 4% of protein content; Premitex XLK-13024 is ideal for low-cost IWS slices with a 7% of protein content; and Premitex XLK-13025 allows the production of IWS slices for traditional melted cheese with just 11% of protein content.
