‘Delyted’ with fat replacer success

Clean label ingredients company Ulrick & Short has revealed record sales figures for its Delyte range of fat replacers, and says it’s all thanks to potential cost-savings for its customers.

Originally designed to help hit nutritional targets and provide healthier label declarations, the Delyte range of fat replacers is now playing a significant role in keeping formulation costs down and is a vital ingredient in cost engineering, says the company.

“One particular sector benefiting from the range is bakery – which many believe to be the hardest hit in the current economic climate, where key ingredients such as flour, eggs, sugar and fat have seen hefty price rises,” says a spokesman for Ulrick & Short. “Bakers can now save up to £1,000 per ton of fat by replacing up to 50% of butter, margarine and oil in products without any reformulation. Water activity is also unchanged from full fat formulations, thus maintaining shelf life.”
