Dawn Foods helps bakers premiumise sweet bakes

Dawn Foods has launched two new limited edition, bake-stable liquid flavourings, ideal for adding the flavours of a quintessential English summertime to sweet bakes and desserts.

Made in the UK using natural flavour components, the new highly concentrated flavourings are available in Wild Strawberry and Classic Trifle. According to Dawn both these on-trend flavours will help bakers ‘premiumise’ sweet bakes and, as a result, attract incremental sales this summer.

The versatile new Wild Strawberry and Classic Trifle Flavourings can be added to ready-to-use ingredients such as creams, frostings and mousses and, because they are bake-stable, they can be added direct to the batter in cakes, cookies and muffins too.

Fresh wild strawberries, with their sweet but zesty notes, have a limited season and a subsequently high price point. A dose (5g to every 1000g) of Dawn’s new Wild Strawberry Flavouring gives a subtle strawberry flavour and is perfect for use in strawberry and cream gateau or strawberry tart as well as paired with lemon, lavender, thyme or black pepper for a modern take on traditional summer flavours.

Bakes featuring dessert flavours, particularly those with a nostalgic back story such as trifle, banana and custard or rhubarb, continue to be popular but this time it’s with a new twist. Dawn’s new Classic Trifle Flavouring means bakers can easily tap into this hybrid trend too. With hints of sherry, berries, custard and cream, the new flavouring contains all the delicious components of one of England’s best loved summer desserts in liquid format.

Dawn suggests bakers can use the Flavouring to make modern afternoon hybrid cakes such as Classic Trifle Flavour Muffins – muffins injected with custard and fruit, then topped with a swirl of Trifle infused frosting and topped with fresh fruit.

They are looking for products that can deliver this sense of adventure with new flavours, colours, textures and aromas. Indeed, according to Kantar Profiles/Mintel report Feb 2022, 29% of consumers state that a ‘new flavour twist’ as a key reason for influencing product choice across cakes, cake bars and sweet baked goods.
