New salt naturally lower in sodium

SaltWellSalinity, an international salt company, has launched SaltWell, a naturally low sodium ingredient suitable for use across the food industry.

Salinity was offered exclusive rights to mine below a dried up lake in the remote Atacame region of the Northern Chilean desert, where lies a huge salt and mineral rich sea. Scientists discovered that the salt harvested from this Jurassic aquifer was naturally low in sodium, and with many UK food manufacturers failing to hit Government salt reduction targets, the natural low sodium SaltWell product was launched.

Already being tested by one multinational food company, the salt – which naturally has 35% less sodium in its make up – reportedly tastes exactly like ordinary salt, yet it contains less sodium (which can have detrimental health effects).

Current low sodium salt available is created by diluting sodium grains with potassium grains. However, this often leaves a bitter aftertaste, and it can also present separate issues in some food manufacture. The Saltwell grain is naturally formed to contain the potassium within each grain, thus proving ideal for a range of food processes.

Simon Wright, founder of OF+ – specialists in developing sustainable foods – says, “Increasingly, supermarkets and food brands are looking to lower salt levels without using weird-sounding ingredients. A new salt that is naturally lower in sodium ticks all these boxes whilst tasting salty and avoiding the bitter taste often found with other salt substitutes. I can see a huge demand for it in the future when it becomes available for consumers to buy in shops.”
